Marmalade Flavour

Over the weekend, I made some Seville orange marmalade and put it up
in mason jars. Should I just start using it now or will the flavour
improve if I hold off for a few weeks? When a jar is opened, must it
be kept in the fridge or can it be kept in a cupboard? I suspect that
the cold of the fridge would make the jelly rather hard to spread
unless it was given a chance to warm up first. Thanks.

The Toronto Star used to run a recipe from Frank Jones I believe that was
quite good. Now I am South of the border I would love to get a copy ..
Anyone have it?
