My pepper garden has produced an enormous abundance. I've dried some
(strung up and dehydrated), but I would like to store more (for later
use as 'poppers', etc.).
Is there any way I can do this without going through all the USDA
regimen of pressure canning, etc?
I've heard that placing the peppers in a jar of vinegar, with a little
salt, would do the trick (or at leas as long as it takes for the next
crop to inundate me) as long as it's refrigerated. Is this valid?

Have you tried to freeze them? When the season is bountiful, I wash
and seed my peppers and slice them with the food processor. Then I
pack the rings in zip lock bags and pop them in the freezer. I never
worry about "freezer life", because they go pretty fast. :-)

My brother pickles his Hungarian sweets in the same brine we use for our
dills. He may or may not seed them but makes a lengthwise slice in the
whole pepper so the brine gets inside the pepper.
