pickled mixed vegetable recipe?

Does anyone have a recipe for pickled mixed vegetables逆he kind that look
completely gorgeous on the shelf, kinda like a still life painting in a jar?
Appreciate any suggestions.

The old ( as iin a few years ago) Bernardin book has a jardiniere
pickle which may meet your needs.

Yiel 5 pint jars
2 cups small florets cauliflower
1 1 /2 cups small white onions
3 stalks celery, sliced
2 carrots, cut into 1 1/2 inch julienne strips
1 small zucchini, sliced
2 large sweet red peppers, cut into strips
1 slarge sweet yellow pepper, cut into strips
1 large sweet green pepper, cut into strips
4 cups vinegar
2 cups water
2 cups sugar
1 tablespoon pickling salt
3 bay leaves
6 whole peppercorns
3 cloves garlic, thingly sliced
-fill boiling water canner with water. Place 5 clean pint jars in
canner over high heat
-prepare vegetables as directed
-in a large stainless steel or enamel saucepan, combine vinegar,
water, sugar and pickling salt; bring to a boil. Tie bay, peppercorns
and garlic in a large square of cheeseclothg to make a spce bag. Add
to liquid and boil 5 minutes
-add cauliflower, onions, celery carrots and zucchini; return to boil.
Remove from heat and add peppers. Discar spice bag
-boil lids in water according to manufactuere directions
-ladle vegetables into a hot jar to 3/4 inch of rim. Add hot liquid
to cover vegetaables to make 1/2 in head room. Wipe jar rims, put lid
on, etc.
-Places jars in canner. Cover canner return to boil, process 10
minutes. Remove, cool 24 hours and check for seal.
Our canning kitchen has found this to be a popular item. It can be
used also to make an antipasto by using these pickles and then adding
meat products and mushrooms and olives right before serving. Hope
