mint jelly without added sugar

Does anyone have a recipe for mint jelly without added sugar?
The "certo" recipe with sugar for mint jelly works great, but not with
"certo light".
Any help appreciated. Happy canning!

Certo light? Is that a new product? Haven't seen it in Mpls.
Have you looked at Pomona's Universal Pectin product? That's a two-part,
low-methoxyl pectin (I buy it at our food co-op) that has instructions for
jams and jellies without added sugar. A jelled mint infusion without any
sweetener, though, doesn't sound appealing to me.
An UNTRIED idea: Create your mint infusion using apple juice instead of water.
Let us know what you find out and how it works out.
