Freezing cheese

I received tons of cheese for christmas and havent put a dent in it.
Can cheeses be frozen or will they keep a whil. I'm talking cheddars,
stiltons, edams, goudas etc...

Hi Dave;
We oft buy in bulk, vacuum seal what we have extra of, and drop in the
freezer. Texture may change a bit, but still fine to eat or cook with.
Have never done any soft or semi-softs, so you're on your own here.

In reference to preserving cheese, we buy in bulk from Sam's and a food co-op
and often have much more cheese on hand than we can use before it goes bad. A
friend gave me a very good suggestion that works especially well for the softer
cheeses like Monterey Jack and mozzarella. But it would be helpful for most
cheeses. I grate the cheese as I would for using it in a recipe, then toss it
lightly with cornstarch, put it into a ziplock, then throw it in the freezer.
The cornstarch prevents it from sticking together when it freezes, so I can
measure directly from the ziplock to use as needed.
