sun Dried Tomatoes - preservation

I have alot of tomatoes I want to dehydrate, am planning on storing them in
olive oil . In the past I've dried them, dipped in vinegar and stored in olive
oil, in the fridge. But I'll have more than I can use in 6 months, plus want
to give some as gifts. . Can I preserve them any other way? Like can them, in
olive oil? Or what. I'm stumped on this one!

Why not just store the dehydrated tomatoes in jars or zip bags and make the
tomatoes in olive oil as you need them?

Excellent suggestion Mary. One would get a zestier flavour that way too.
