I would like to try to freeze some of the leftover pumpkin and butternut
squash I used for some dishes.

YUP - sure thing. Put it into those small disposable containers that Glad
is putting out or bag it up in a ziplock or even spoon it into ice cube
trays.
BTW, my sister did the BEST butternut squash for Thanksgiving that I've ever
tasted. I even ate it and I hate butternut squash. She cooked the squash
with 2 cut up tart apples (peeled), then mashed them with a dab of butter, a
little brown sugar and a sprinkle of nutmeg. YUM.

I probably get requests for it for Christmas....:)
Make sure that enough is made enough for two cups leftover, then add
eggs, cream, a bit more seasoning/brown sugar and pour into a pie shell.
Butternut makes a great pie!
I have dried some in my new dehydrator *strutt* I works beautifully:)

I recently froze some pumpkin that I baked in the oven.
I placed it in freezer containers and it tasted great.
Just do not leave it in the freezer too long.

Or invest in a Foodsaver from Tilia. Storing in vac sealed bags means one can
preserve far better for much longer. I have strawberries in such a state of
limbo - no sign of freezer burn yet.
