Lack of Popping Lids!?

Hi,
I am new to canning. Just canned 2 quarts plus 1 pint of tomatoes. 4 pints
applesauce and 1 pint of rhubarb. Out of all of these, only 2 jars had the
definate ring of the lid popping. All others sealed, with the lids going
concave, and I can't push them up and down. Why aren't my lids popping?
New lids from the store...I heated them, and wiped the rims of the jars.
Water boil bathed them for recommended time. Do 1/2 inch gap at top of jar.

One jar of tomatoes, I reprossed 4 times to get it to seal. Another jar of
tomatoes, 2 processing times. All others one time.

Any advice?

They may have sealed when still in the water. If they're concave, you're ok.

We be jammin' -- apricot red pepper jelly; plum jelly in a couple weeks -- or next week if I thaw the juice. Door County cherry jelly and jam. Peach in about 1-2 weeks. Oh, my.... Cherry relish, watermelon pickles if I find a decent melon. Bread and butters? Maybe, maybe not. Dried cherry chutney? Mmm-maybe. Raspberry-Peach Conserve? Sure, why not? Tomato juice? Not for a while.

were you with them every minute for 24 hours. It is easy to miss a "ping"
or "pop". If your lids are truly concave, they have sealed.

If the lids are down in concave position, they must have pinged while you were
out of hearing distance.
