Dehydrating Onions

I am looking for a good recipie or method to dehydrate onions. I was
wondering if anyone has a good idea.

We live right next to an onion packing shed. The big trucks go down the
road full of huge yellow Spanish in the fall. When they turn the corner
or hit a bump.....road kill. We take those onions, cut off the smashed
side, peel, slice and dry just like that.

Oh, how hysterical! What a boon for you!

I got a bunch of onions on sale at the grocery store and my husband
thought I had gone berzerk, I dried so many onions! I just sliced
them up and dried them till crisp. Some I broke into flakes, some I
whired in the quisenart for powder. My husband just ate the last of
it a few weeks ago, and they were over a year old! The house smelled
fabulous during the drying.
