You have to do this in a roundabout way for DEW and just about anything else.
You will need a 3 scale hydrometer - used in winemaking.
Citric acid - get it at a winemaking store. Substitute fresh filtered lemon
juice - NEVER use that fake lemon liquid sold in stores - it is bitter.
Take quart bottle of Dew and let it go flat - absolutely flat.
Pour the Dew into a deep but narrow container and slip in the hydrometer.
Measure on the % sugar scale. 15% is considered to be the sweetness of natural
juices. Weigh sugar, note, add, stir fully, test to get to 15%, very carefully
measure the citric acid required to balance the taste. Work that formula up to
the volume of "DEW juice" you need per jelly recipe I suggest to use a peach
jelly recipe to arrive at sugar and pectin for jelling. Process as per the
recipe - usually BWB 5 mins.
Suggest you use a lo-sugar pectin.
Use no more than 6 to 8 cups juice per jelly recipe to make sure no darkening or
loss of flavour occurs. Long slow boiling destroys the pectin.
