You can cut off the flowers and dry them until the seeds are falling out.
However, be sure to put them safely away from the birds!
wait till the seeds begin to mature (I watch for the first sign of
pilferage by my birdies.. then just invert a brown lunch bag over
the flower head, gather underneath with a twisttie.. and wait..
shake the bag daily.. you'll hear the seeds when they have fallen
into the bag in a couple of days (shaking also helps dislodge mature
seeds), then turn flower downwards, take off bag (if there are still
bunches of seeds, you can put on another bag).. and voila..
this works great for marigolds (which volunteer all over my yard
EXCEPT in my garden where their benefits are welcome)..
am awaiting my own sunflower seeds, bags in hand <g>
