I have a few packs of unopened pancetta. The 'use by' date is a few
days away. The pack label doesn't say that is unsuitable for home
freezing so I wondered if its OK to put them in the deep freeze?
If so would it need a slow thaw or can I do it quickly by putting the
pack in a bowl of cold water?
Thanks for any info.
If anyone knows of web sites with Do's and Don'ts for freezing I'd
be grateful.

I don't know if this helps you or not, but I keep unopened packages of
cured meats in the refrigerator for *months* pasts the "use by" date with
no problems at all.

When smoked bacon is on sale around these parts, we regularly buy 8 or
10 packages, bring them home and pop them in the freezer.
For use, we let them thaw in the refrigerator and they are as good as
the day they were purchased.

For bacon, I prefer the locally made non-cured variety. It's sold
frozen though. I thaw it, par-cook it all at once in a shallow pan in
the oven, drain, cool then freeze flat and bag frozen.
