Roasted red peppers

Is it possible to preserve roasted red peppers? I see recipes that ask
for "a jar of roasted red peppers," but I don't know if this is one of
those cases where it can be done safely commercially, but should not be
attempted at home.

Any suggestions are appreciated!

I just read Anita's post about freezing, and I may give that a go. Do
you have a recipe for pickling them? I'm new to canning, so I'm not
confident I could cobble something together and still be safe!

I am just back from 2 weeks away and my files are a mess, but I think that
Bernardin has a marinated red pepper recipe. Try their part of the
homecanning site and see if it still exists. Ellen

marinated pepper recipe (I'll look again), but I did find several other
things that sound really tempting on that site--great tip!
