Pesto

Can pesto be processed safely in a hot water bath? I can't find any
information in any of my reference books. I have some recipes for
olive oil pickles, so I know something oil-based can be done safely,
but I still have qualms about risking an entire batch of
pesto only to have it go bad.

Eek, I'll bet freezing it is a better choice, if that's an option.

Freezing is a better choice. We have put by (yesterday) 27 cups of basil
pesto (Marcella Hazan's blender pesto) in 1/2 cup individual servings in
freeze-lock bags. We eliminate the grated cheese, preferring to add it
when serving or using the pesto. Works fine. Third year we do this.
