That's the smell of a dead animal being cooked at high temperatures. Nasty

The smell you get is from jars that are leaking in processing. This is due to
improper processing - over pressure and lack of exhaustion are the primary
reasons. Sudden depressurization is another cause ( fairly rare ) but most
folks know better than douse a pressurized canner with cold water.
