Help with steam juice extractor please!

Two questions about using a steam juice extractor:

How do you know when to stop? That sounds pretty obvious but if you
are using a small amount off fruit it can be difficult to get a juice
with taste. Any toughts?

To stir (the mush) or not to stir? I just did a load of apples and
they went into a fluff and then into a mush, pretty well impermeable to
steam I would think. After I had stirred it (turning it to concrete!)
I thought maybe it would have been better not to?

I have been really impressed with the results so far - I had a good
crop of quinces and medlars both of which are now excellent jelly!

The instructions for the juicer should say. If you don't have the
instructions, the Mehu instructions can be obtained here:
http://store.yahoo.com/steam-juicers/index.html

If you're using a Weck juicer, try their web site or give them a call and
they will send directions.

I seem to remember that stirring of the mush is ok but not til the latter
1/4-1/3 of the time.

Hi Bev, thanks for the ideas. I am using a Hackman juicer which is
excellent - apart from the instructions. One page of A5 (that's about
half a normal US piece of paper!). But! The idea of getting another
manufacturer's instructions is a good one, the principles will be the
same! Thanks.
