I saw the thread on Malt Vinegar...I guess I am just one of those vinegar
people...I love all vinegar...Making my own vinegars would be a dream come
true...especially balsamic!...Since I am a total beginner at making my own
vinegar...could someone point me to a good site or give me some tips! Thank
you!

If you are thinking about balsamic, I hope you have about 20 years to
wait for it to age into some mediocre stuff. The really good stuff
can take up to 50+ years. Starts with grape must.

OH No!....lol...Well I am hooked on Balsamic ...but I don't think I have
THAT kind of patience...Guess I am reduced to buying...Well that still
leaves regular vinegar and Malt...

Making vinegar is easy. Making good vinegar is harder. Making balsamic
that amounts to anything is right at the edge of impossible unless you
can get the right grapes, the right barrels and the time to wait for it.
Oh, and if you're Italian and live in Modern, Italy.

Check a brewing shop for a vinegar "mother" which is a colony of
acetobacters that convert alcohol to acetic acid. They come in jars and
are ugly looking things; like a may of some rubbery stuff. They also
usually come with instructions. Read them before you take your "mother"
up to the counter to pay for it and see if you really want to get into
it.

Thank you...I thought I would at least try it...I don't think I have ever
had anything but white distilled from the supermarket...(besides my coveted
balsamic...at $5 a 16 oz bottle)...I mean...I have never had any homemade
vinegar...so I might find that I have to have the "real" stuff...lol..
I have a really warm storage room ...that houses my furnace and hot water
tank...I thought it might be a good place to try making some vinegar...

Good idea...Thanks Peter...But first I better get the basics of regular
vinegar down...
I have tried to save on Basalmic before and buy a cheaper brand...but it was
so horrible I just threw it out...Now I don't skimp...You can really taste
the difference...I guess that's why I wanted to make my own...but it sounds
like I might be gone before its ready to use...lol...
