Hi all,

I have a question. I was browsing my Cumberland catalog, drooling as
always when I saw this thing called a Steamer Canner (I believe) and I
was wondering what it's for. Does it replace boiling water bath method?
I'm new to canning so bear with my wrong verbage and such.

Thanks!

Shelley

Although Steamer Canners are sold, the USDA does not recommend them for
canning. Apparently there are issues on whether they process the food
enough to destroy bacteria and spores and to make a proper vacuum in the
jar.

Stick with the Boiling Water Bath method to be safe.

I have had a steamer canner for years and use it for fruit. In 15 years of
use I have never had a problem. Maybe I've just been lucky, I dont know.
My water is from a mountain spring and is so hard that it leaves terrible
deposits on my jars if I boil them to either sterilize or can. I use a
combination of my dishwasher and my oven at 225 F to sterilize jars.
Tomatoes and other vegetables I always do in my pressure canner.
