I cut eh lineing part off the stalk, and freeze in Tablespoons of it.
Keeps very well.

Huh?
I guess my brain was in the freezer. I use the lining of the stalks for
curries (I use the whole stalk for tea). Peel back the tough outer
leaves and harvest the pinkish inner lining, cut as you might use it.
For the inner soft leaves, I use all of the lower parts of them. Wrap a
unit dose of them (for me it's a T) in plastic, tightly, and put all
these wads in a thick freezer bag. Freeze. When I want to do a soup or
curry, I pull out one wad and get out my pestle and mortar and have at
it. No need to wait for it to thaw.
