Help, jalepeno jelly won't set

First off, I'm new to this newsgroup, so I'm sorry if this type of post
has already come up. (It is probably in FAQ so if you could tell me how
to access that it would be great!)

I made my second batch of jalepeno jelly last week using liquid pectin
and made the mistake of doubling the recipe. Now it won't set. Does
anyone know if I can salvage it by adding more pectin, reboiling it or
something else. I don't know what I would do with 12 jars of jalepeno
syrup.

Hi Ann;
Just went through the same thing with some black nightshade jelly.
I tried lots of different things tryiing to get it to set, and what
finally worked, was to take 1 jar (to experiment with) and simply boil it
in 1 minute increments,(timing after the rolling boil) pour into a new
jar, and let set 2-3 days to check the set. I'd start with at least 2
extra minutes, and found 2 1/2 to 3 worked just fine. Once I had that
down, then I just cooked the rest of the batches. Everyone set just
fine! No more sugar, pectin,etc.
You will probably lose about 2oz liquid from each 8oz jar, so instead of
12 jars, you'll probably end up with 8 1/2 to 9, but you'll have jelly,
not pancake syrup :) Hot pancakes!!!
BTW: Adding more pectin didn't make it set, but when I boiled it down,
that batch I could play hockey with!
