I know a lady who freezes all kinds of squash successfully, but first she
peels it and runs it through the food chopper. This way she has it in the
form she plans to cook it in.
I wouldn't bother freezing anything from the squash family you are not
planning to cook unless you really like slimy cucumbers ' )

We always freeze cucumbers . They make an excellent cucumber salad in
the winter.
Peel and slice them about an eight of an inch thick. Place an amount
that you would use at one time in plastic containers or freezer bags and
store in the freezer.
When ready to use remove from container, let it thaw, sprinkle with a
little salt, let stand for about a half hour and then squeeze out the
juice. Add a little vinegar,about 1 TBS, mix and enjoy. Because we are
of European extraction we also add a little sour cream . We found this
to be as good as when made with fresh cucumbers even after a year in the
freezer.

And if you like the flavour, you can also use yogurt ( skim milk or
otherwise)

I forgot to mention that in freezing cucumbers I use only the pickling
type ,about 4 to 5 inches long. If you use the large ones then you
should cut them thicker,remove the seeds and cut the slices in two.
Also,
you may have to experiment with the amount of salt and vinegar depending
on the volume of cucumbers and your taste buds.

I didn't know you could prepare them this way...
Are the cumbers fine if no salt or vinegar is added?

We never tried them without salt or vinegar because we were making a
salad but looking at the texture of it after freezing I would say that
it would be o.k.without it.

This is a good idea! We like that sort of salad too - at least I do.
My mom used to make it all the time, with vinegar and sugar, and called
it "mizriyeh."

I also appreciate the idea. I love tzatziki and always salt and drain
the grated cucumbers. Tested by grating, freezing and thawing a
cucumber and it works great. Since I have a bunch of cukes in the
refrigerator and probably more on the vines, I'm planning to start
grating and freezing in 1 recipe packages. I feel certain that they
will be at least as good as the stuff I buy in January.
