I recommend you get the book "Putting Food By", second edition I
believe. It will answer most, if not all of your food preservation
questions. If your interested in food preservation, it's a must have
book.

Canning meat is not something one knocks off with a recipe. Canning flesh is
done strictly under pressure and even then ought not be done until a preserver
has developed top-notch canning skills. Freeze meat until your canning skills
are top notch.

Yes. There have been one or two items that show it is getting dated but when
used as a companion to USDA electronic Complete Guide to Home Canning there
ought never be a problem.
As a foundation for preserving it is second to none.

That is an absolute fact. For anyone seeking to can meat it borders on
necessary education. Canning meat is VERY serious business. Meat is second
only to fish in terms of the risk in home canning.
