I would like to try canning chili sauce this year. Does anyone have any
good recipes?

G'day, One has to be careful that you get an approved Canning recipe by the
USDA or a like.

Most salsa recipes I have come across are for freezing only.

Your hot salsa recipes sounds great!! Plan on making it for a local BBQ

5# onion (spanish,white,ect.)
10 Green Bell peppers
1-1/2 qts Hot bannana peppers
2qts.white vinegar
5# gran.sugar

Blanch tomatoes peel,remove seeds from peppers,peel and
quarter onion,use food prosessser,grinder,or chop by hand,
what ever cosistancy you prefer.put all in pot, add vinegar
bring to boil, reduce to simmer 2 to 3 hours,add sugar,put
about 4# to start,add 1/2 cup salt,now that sugar is in,
Start stirring for about 2 hrs,If you have to leave it unattended
Remove from heat! this burns very easy,stir cook down to the way
you like it.if you want more sugar at the end,add some but cook
it down a bit.you can add any hot peeper sauce if you want to
"Kick It up a notch" The secret to this recipe it time,
I make it in fall,when it gets cool outside,make a sunday out of
It,have some wine,enjoy the day my 8 yr.old daughter loves to help
