Tasting of China Ying Hao, Organic

Tea - China Green Ying Hao, Organic - Carefully plucked leaves
consisting only of the small single top leaf and bud.


Vendor - Capital Tea <www.capitaltea.com>


Dry leaf - Long twisted grey and white wide needles, fragrant.
.

Wet leaf - Olive green, complete leaves (long and thin)perfect,
uniform, the very highest grade.

Water - Crystal Geyser natural alpine water bottled at
the source, California, Sierra Nevada Mts.


Steeping Method - 2 Gaiwans (one for steeping, pour liquor into
second) , chop with lid during steep to provide
mixing, lid never completely closed. Hot water
never poured directly on leaf, but on interior
side of gaiwan.


Measuring Instruments:

* Digital gram duplex scale, Tanita #1479; accuracy =/- 0.1g
* Digital, self checking, thermometer Checktemp F,
Accuracy =/-0.03 C for centigrade thermometer,
and +/- 0.05 F for Fahrenheit thermometer.


Vendors recommendations: 1 heaping tsp(~2.5 g), 70 C, 3 min brew.


Sample 1 -2.5 g/ 6 oz of water, 70.0 C (158 F)


Steep 1, of sample 1 - 3 min, (tea floats so chopping with lid to
saturate the tea with water helps obtain a
good first cup)


Color - Clear, tinge of yellow.

Aroma - Light floral

Taste - Smooth, light sweet..


Steep 2, of sample 1 - 3 1/2 min,


Color - Clear, tinge of yellow green.

Aroma - Pungent floral, spicy, complex.

Taste - Delicate, complex, flowery, spicy.

Aftertaste - Lingering sweet and floral..


Steep 3 of sample 1 - 4 min.


Color - Clear, pale yellow green.

Aroma - Light flowery, sweet

Taste - Delicate, sweet, complex.

Aftertaste - Lingering floral.


Sample 2 - 3g/6 oz of water 75.0 C (167 F)


Steep 1, of sample 2 - 3 min,


Color - Clear, pale yellow with a tinge of green.

Aroma - Complex, spicy, flowery, sweet.

Taste - Complex, flowery,sweet, brisk.

Aftertaste - Lingering, light sweet, with a hint of spicy..

Steep 2 of sample 2 - 3 1/2 min

Color - Clear, pale yellow with a tinge of green.

Aroma - Complex, flowery, with a hint of spice,

Taste - Wonderfully complex, flowery,spicy,very sweet,
in perfect balance. An excellent cup.

Aftertaste - Lingering, light sweet, with a hint of spice.


Steep 3 of sample 2 - 4 min

Color - Pale yellow.

Aroma - Light sweet and floral.

Taste - Brisk, refreshing, sweet.


Conclusions -

1. At 75 C, 3 g/ 6 oz of water, 3 1/2 min. the aroma
is complex, flowery, with a hint of spice, The
taste is wonderfully complex, flowery,spicy,very sweet,
in perfect balance. The aftertaste is lingering,
light sweet, with a hint of spice. An excellent cup.

2. This tea is aromatic and tasteful over a range of
steep times, and 2 steep temperatures, but 3 1/2 min
appears to be the optimum steep time.

this appears to be the one. I also appreciated your mentioning the measurement
