Menorah Vegetable Salad

6 hard boiled eggs
14 green asparagus spears (1/2 inch of tip removed)
black and/or green olives
melted butter
paprika

Put the whites of the eggs through a coarse sieve and spread solidly on a
large flat platter, as the background for the Menorah.

Lengthwise across the center of the platter place three asparagus spears,
end to end. Using this as a base, place eight asparagus spears vertically
to represent the eight candles. To form the base of the Menorah, place
under the lengthwise line of spears, in the center, two half pieces of
asparagus, side by side, vertically, and underneath theses, one asparagus
spear horizontally.

Mash the egg yolks with melted butter and form into tiny balls, with a
point at one end, to represent the tips of the flames. Place these balls
above the eight asparagus spears in the row and sprinkle a little paprika
on the tip of each ball.

Use the remainder of the yolk alternately with the olives to form a frame
around the edge of the platter.

I copied this recipe, with minor editing, from "the Jewish Home
Beautiful", 3rd printing, 1945, published by the Women's League of the
United Synagogue of America. Several printings and editions available used
online.
