Sunflower seeds are considered kitniyot and thereby not kosher (except
for Sephardic Jews).

k
OK, but how about squash or pumpkin seed, after all, we are allowed to eat
the squashes or pumpkins, themselves for Pesach. this occured to me as I
was cleaning an acorn squash for a Seder dish for two vegetarians.

WRT kitniyos, we Askenazim can't eat it, but do we have to sell it?
Do we have to put it outside our view? It is ready for eating when
Pesach is over, no matter what, yes? Immediately after the three
stars, yes? And the contracts for sale of chometz only include
chometz, not kitniyos, right?
Don't let my confidence cause anyone to think I am right.
