I've been getting a craving for Noodle Kugel. The only recipe I
have calls for sour cream, and I don't care for sour cream.
Does anyone have a recipe for noodle kugel without sour cream?
Rach
(There's no decent Kugel in Pittsburgh! Help!)

Here are a few easy ones- no sour cream or dairy if pareve margarine
is used. All are very tasty!
I suppose you could use Passover egg noodles if desired and check the
pie filling and other stuff if appropriate for Passover.
Cherry Noodle Kugel
1 lb medium egg noodles cooked
3 eggs
1/2 lb melted margarine
1 can cherry pie filling
Combine hot cooked noodles with margarine and eggs. Sprinkle with
sugar and cinnamon ( how much is up to you ). Top with pie filling.
bake 350 about 35 minutes. Golden raisins may be added if desired.
Applesauce noodle kugel
1 lb noodles cooked
2 tbs. sugar
1/2 lemon with juice
2 eggs separated
2 cups applesauce
1/2 cup melted margarine
1/2 cup raisins
1 8 0z. crushed pineapple
Mix everything except egg whites and pineapple. Beat whites stiff and
fold into mixture.
place in a 9 x 13 pan. bake 350 1 hour . Add the undrained crushed
pineapple over the top and bake another 10 minutes.
Plum Kugel
1 lb broad noodles
2 eggs
3 tbs. honey
3 tbs. melted margarine
4 tbs sugar
3 tbs. plum jam or preserves or as desired
dashes of cinnamon
Cook noodles and drain.
Drizzle baking pan with melted margarine and drizzle on 1 tbs honey.
Mix noodles with all remaining ingredients. Bake 375 till golden about
45 minutes. serve with a sauce made from additional plum preserves
melted with a bit of honey and water for a saucy consistency
enjoy
