slow roast lamb with anchovy

Found a Pru Leith recipe book last week (jumble sale; I
was running the book stall)

John cooked this PL recipe for lunch

loved it.

Anchovy with lamb sounds really weird but it's a great
combination

Couldn't access recipe. Presumably one pokes holes in the meat and
stuff them with a bit of anchovy before roasting.

I usually serve roast lamb with Shrewsbury Sauce.

The link is mostly to a site that wants you to install an app to access recipes. It's probably okay if you don't mind paying 40 bucks a year for recipes. OTOH, in this day and age, nobody in the free world should have to pay anything to get a recipe.

Ingredients: 1 shoulder of lamb, bone in (about 2.5 kg
)
2 x 50 g tins anchovy fillets in oil ( 60 g drained
weight)
2 red onions, each cut into 6 segments.
2 large carrots, sliced into 2.5cm (1 in) rounds.
3 or 4 sprigs of rosemary.
2 x 400 g tins chopped tomatoes.
2?3 fresh bay leaves.
500 ml red wine.

Score the skin side of the lamb criss cross, into
diamonds.
Blitz the anchovies and their oil, spread this paste
over the meat.
Put the veg in a roasting tin, lay the meat on top, add
the wine. season with pepper. cover with baking parchmenr,
then wih foil, sealed to keep juices in

Bake slow at 170 c for 5 hours, basting occasionally.


I should have a go at Shrewsbury sauce; plenty of
redcurrants on the bushes

Thanks for the recipe!!!!
I should pick my redcurrants before the birds get them. Some years they
leave them alone.
I usually freeze them for jelly making during the winter.
I make what I call Debenham Sauce* for pork. Use the Shrewsbury Sauce
method but replace the wine with cyder and the the r/c jelly with
crabapple jelly.

I come from Debenham in Suffolk and Aspall Cyder is a short walk from
the village.
