What's the difference between a chicken fryer ( pan) and a sauté pan?

They look the same to me. Is this some form of market segmentation?

I don't think there's any difference. My chicken fryer would be called a saute pan in most other places. I don't call it a saute pan because I use a frying pan to fry - not a "saute" pan.

I know about a skillet being shallow and having angled sides. But my 'chicken fryer' has straight sides and is the same depth as the saute pan I'm eyeing, which has straight sides.

In my experience, chicken fryers are cast iron and have a lid. Saute
pans are made from sheet stock.

Mine is like yours. Tall sides for a chicken fryer/sauté pan which makes it great for making gravy with ease.

A chicken fryer is not a skillet. Making fried chicken in a skillet is a
little dangerous since there's a chance of causing a chicken oil fire.
That's the worst fire you can have. Some French folks might call my
chicken fryer a saute pan but you'd never catch me being all uppity and
pretentious.

Ok. I misunderstood what Kalima was asking.

To me a chicken fryer IS a cast iron pan...deep, straight sides, with a lid, used pretty much just for frying chicken. In the South that is the standard pan for frying chicken. My mother had one and she fried chicken and anything else deep fried in that pan.

A saute pan also has straight sides but is usually stainless steel. I have a saute pan, I don't have a chicken fryer since I got away from doing much frying. If I am going to fry chicken like I've done lately with the pork rind coating, I use my saute pan.

I have a T-fal pan they called a chicken fryer - straight sides, with a lid. That's where I got the idea of what a chicken fryer looks like.
I AM going to buy that SS Cuisinart pan. I know I've said here I'd never buy another Cuisinart item ( that @$#$ waffle iron ), but I will cave on this one. Supposedly a sixty dollar pan for 22 bucks. all metal and with a helper handle.

My saute pan is the Cuisinart. 10" Pan with 3" depth. And a Lid. I have other Cuisinart stainless. I like it. It cooks very well.

AFAIK, chicken fryers have straight sides and always a lid. Skillets
have flared sides and no lids.

I got a big one too but these days, I tend to only cook for my wife. I may retire that pan - end of an era. No problem, I'll just use my wok.

A chicken frying pan has straight sides and is deeper than ordinary
fry pans. I think a 10" pan is too small for frying chicken. This is
my go-to fry pan for many uses:
