In a recipe for Kheer (Rice pudding) in an Indian cookbook, I saw
as one of the ingredients "kewar water", besides just "water".
Now altho' I am Indian, I couldn't figure out what that was. It was
shown to me in a (an American) friend's house who asked me what it was.
I don't think it means "well water" or "rose water".
I don't know the title of the cookbook, and I haven't seen that one
before altho' I usually don't read recipes.
So what is it?

I checked my reference book and found kewra water, which might be what you
are looking for. It is made from some kind of cactus plant and has a
flowerly fragrance, I guess it is much like rose water.
