I hate to throw away expensive food. But then there are expensive doctor
bills to consider.

If it is still in the cryovac package I'd try it
Lynn in Fargo
If it's bad will I die from "liver disease" ?
It's fine, go ahead and use it - unless it has been opened. In that
case, toss it.

Usually ok for a few days after sell date, it depends when it was
packed, and if it was refrigerated continually. If it's pork, I'd go
with the safe answer no and throw it in the garbage.
No need to make an impromptu hospital visit.
Organ meats do not last very long even when cryovaced. Go get a new tube
if you must.

Tubular organs, eh?

Open it and have a look. If it's pristine, smear some on a cracker and
enjoy yourself. I've heard a little chopped onion on top of something
like that is pretty good.
Last week opened a package of Johnsonville little smokie things that
had a February expiry on it. No problem. Tasty. Still tasty today.
I'd transferred them to a Ziploc vac bag.

They were frozen right, if not I hope your medical coverage is paid up
to date.
They weren't frozen right, never mind frozen at all; they were in my
refrigerator. Still are, too.

You'll eat anything
No, there are definitely some things I do not and will not eat.
I don't eat spoiled food, I don't eat beets. And I've no need nor
desire to be unnecessarily wasteful--most of the time. I'll confess to
sometimes tossing something that's edible but I know myself well enough
to know that I'll never eat it; that it was a bad purchase made on a
whim.
