A simple pan-fried hamburger made from ground chuck, seasoned with S&P
and some garlic powder. I'll add a splash of Worcestershire sauce.
I'll be baking some frozen waffle fries to go with it. A very quick,
tasty dinner. :)

Sane here. We had some leftover steak that I sliced up and used for
sandwiches. When I cleaned out the freezer the other day there was a
container that I thought was butternut squash. It turned out to be
lentil soup and I don't remember making I because the only times I tried
making lentil soup were disasters. It turned out to be excellent.

Yesterday I went to my son's house and has Shepard's pie. My DIL made
me a dish to bring home and that will be tomorrow and maybe Thursday lunch

It was an extremely warm 40 F here, so I grilled in my shirtsleeves.
Skinless, boneless chicken breast. On a salad with balsamic vinaigrette.

I'm still watching the forecast. My outdoor thermometer (which is too
close to the house, admittedly) says 40 F still, so perhaps the models
predicting a foot of snow will be wrong.

Hmm, risotto. I should try making risotto, it's something I've kind of
ignored for no particular reason, and my wife is always on the lookout
for new western dishes to try. I'd be using either jasmine or
Riceberry rice, though. Or possibly a combination of both.

It's on my list of dishes I want to try cooking. I have only had it a
few times in restaurants and it was good. I had a really astoundly great
seafood risotto at an Italian restaurant in southern California. I don't
think it will work with Jasmine. You need a short grain rice like arborio.

That's an oddity. If the only lentil soup you recall making was
disastrous how did it wind up in the freezer? And then come out of the
freezer and be excellent? Hmmmm.

That's a good question. My wife has a vague recollection of a friend of
hers having made some soup and giving her some. She things it was
already frozen.

Unless I'm mistaken, Arborio rice is required to obtain the texture of
risotto. You could use Jasmine and/or Riceberry but it would not be
anything like Italian (or even Americanized) *risotto*.

Yes, short grain rice and yes, Arborio is recommended. It's a round rice.

Substitions will result in a rice dish which may be quite tasty but it
won't be "risotto". :)

I think I just gagged a bit. Taste, texture, smell, I can't stomach
hamburger helper, even as a child. Being forced to sit there until I
ate it *really* solidified that (as a result, I've never made my
daughter sit at the table if she didn't eat -- but no snacks later).

You make me want to make non-white-trash stroganoff. I'll have to
wait for better weather, because my husband hates mushrooms (and

Yeah. I knew it wouldn't be as good without arborio but thought it'd
still be OK. Maybe not... we will have to buy yet another variety of
rice for the kitchen. We already keep 3 or 4 as it is.

Yes, I understand this. Using what we have on hand may possibly be too

Me too, the toughest steak is tender braised with 'shrooms.
I went to the Corral in Nebraska and they had all you can eat sauted
'shrooms... I couldn't stop eating those toadstools.

I was never a fan of Italian restaurants because around here the tend to
offer mainly different shapes of pastas and variations of tomato sauces.
This place set the bar for Italian restaurants. It was amazing. Now
perhaps I am afraid to make risotto because it is unlikely to be as good.

If it turns out that you don't like the risotto you make you can use it
for a Greek Style rice pudding.

I won't bother boring you with the entire story of a former co-worker
who was furious at his wife for feeding him mushrooms because he hated
them. He didn't know there were mushrooms in the beef stroganoff until

We need to find a decent Italian restaurant here. We've been to a
couple, including one everyone raves about. I find their food quite
average. When you do find a good one, the food is just so many levels
better. I find most sauces are a letdown... not the recipe, just the
execution of them.

I've had risotto once or twice before, I do like arborio rice. But we
are far from town and have at least 4 other types of rice on hand,

There was a restaurant here, now defunct, that had a pretty darn good
breakfast bar. Sauteed mushrooms were on the bar and I always got
a large spoonful to top my scrambled eggs. Then I'd go back to just
eat them on their own.

Just like young children that refuse to eat something only because it
doesn't "sound good."

I had one rule with my young daughter - just take one bite. If you still
don't like it, I'll never serve it to you again. Half the time, she
ended up really liking it and asked for more.

I'll sometimes make up a batch of mushrooms and onions, sauteed in
butter and it's a good topping to save for many dishes.

Breakfast.

I slice them, fry them in butter and add a small secret grating of

I can't blame him. I will cook them for people, but I don't care for
the smell, and the sight/texture/taste -- all three -- I find very
off-putting.

Despite my distaste for mushrooms, my primary issue is the look and
texture of them. I'll eat them as part of a dish if they are diced very
small, but if there are huge pieces on a pizza pie, I'll discreetly pick
them off.

If the steak were pink in the center, I'd choke it down. If the steak
was rare/raw, I'd choke down the hamburger helper. Either way, if those
are my dinner options, it sounds like a good diet plan -- LOL

That is a more sensible approach. In the case of my co-worker, as
explained by his son, his wife had made Beef Stroganov for dinner and
when he went back for his third or fourth helping his son picked out
some mushrooms from his plate and said "If you like mushrooms so much
you can have some of mine". When old Mort found out his wife had fed him
something he hates he was furious.

The taste and texture of mushrooms changes a lot with the way they are
cooked. I use them on pizza as a substitute for meat. I like them
grilled on skewers and I like them lightly sauteed with steak. I don't
care for them as much when they are cooked down and shrunken. The best
IMO is to get some button mushrooms, melt a little butter in a pan and
add a little good olive oil, then add the mushrooms and some crushed
garlic. Season with just a little S&P and a few drops of lemon juice.

You might like the eastern French version, an Alsace onion tart. It uses
a pastry rather than a yeast crust and is sort of a cross between quiche
and pizza. The topping/filling is made with bacon, eags, creme fraiche
and lots of onion.

The thing about beef stroganoff (or any recipe, really) is you can
adjust the amount of whatever, in this case mushrooms. The only way I
really like mushrooms is battered and deep fried. Many restaurants/bars
had fried button mushrooms on the menu as appetizers back in the 1980's.
I was surprised how tasty they were.

My mother made beef stroganoff using thinly sliced beef tenderloin. She
made it for company when I was a child and it was delicious. She
probably skimped on the mushrooms. ;)

Alsace were made that way.

There's a simple answer to that. Don't order pizza with mushrooms. LOL
If someone you are with wants mushrooms on their pizza, have them put
on only half of it. :)

That's funny, he reacted like a child who "ate something that he didn't
like" but didn't realize it at first. Clearly, he didn't dislike them

I've never once, ever, not a single time, have I seen "mushroom pizzas
are on special." Pretty much all pizzas come with mozzarella.

Yeah, that's a silly troll response. If you don't like mushroom pizza,
"on special" or not, don't order mushroom pizza. Two for the price of
something you don't like is a waste of money.

Easy Beef Stroganoff in a Crockpot

3/4 - 1 lb. top sirloin or very lean stew meat

1 envelope onion soup mix

1 can of mushroom soup

1 - 8 ounce package of sliced mushrooms.

1/2 to 3/4 cup water.

Sour cream


Cover and slow cook several hours; amount of meat or mushrooms
can easily be increased.

When meat is tender and ready to serve add a large dollop of sour
cream and stir to combine.

1 - 8 oz. package of separately cooked noodles.

Serve over the cooked noodles. Parmesan/Romano shaken on top
of the serving is a great finishing touch.

Not bad! I have something close I use at times.

1 small can of evaporated milk replaces the milk
3 TB minced dried onions for the soup mix + 1/2 ts black pepper
(optional +1/4 ts powdered garlic)

I don't have the onion soup mix about often.

Once I saw the recipe, I showed a variation I've done from time to time.

I also do another one but it's technically a curry vice stroganoff.

I tend to large batch this but it can be split down.

I prefer the multi-meat type so here is that one

1/2lb cubed pork meat
1/2lb cubed beef meat
1/2lb cut sausage, firm types

3 cups beef gravy (I have a jar that makes it, similar to the packets)
2-3TB curry, normally half Vaduovan and half rogan josh or medium yellow
1 medium onion, cut fairly small
1 pack sliced mushrooms

Set on medium as develops, reduce to low as it simmers.

Serve over rice or noodles, precooked.

Alternative meats, cubed lamb shoulder, cubed boneless chicken, ground
sausage

Sour cream as an option at serving.
