Need recipe for focatia bread

I'm in need of a good focatia (sp?) bread recipe. One similar to the
bread at The Macaroni Grill would be great. Also, I have a convection
oven so cooking times for convectional and conventional ovens would be
appreciated.

My father, born in Tuscany, made it very simply.
We call it schiaciatta. I believe your spelling should be foccacia.
Anyway, all he did was make regular bread dough (yeast, flour, water,
sugar) roll it out onto a cookie sheet, cook it in the oven for
a while till almost done, and then put salt, pepper, olive oil and
chopped fresh rosemary on it, bake it a little longer.

My grandmother used to make it, and I adapted from what I remember.
I use a pizza dough with olive oil in it, and very yeasted.
Just push it into a greased pan, make little knife or fork
marks all over, so it doesn't get large bubbles, preheat
oven to about 400.

We put on oregano, thyme, basil, chopped garlic, more olive
oil, perhaps sliced tomatos, olives, anchovies, some grated
locatella or peccarino (imported romano) cheese, bake away.

add anything else you like. My kids call it "white pizza", and
prefer it to the usual red soggy type.
