Yes, it is a little different ,it will not flare-up and food is to be
cooked with the lid closed. The holland motto is if you are looking
you are not cooking.
Sure, it has to be specific. Holland grills have little windmills inside
and when the lid is closed, it works like a convection oven. Just look for
the tulips around the base.
The Holland Companion grill is a relatively small portable propane grill,
but seems to be fairly conventional in design and well constructed. I see
no reason why most recipes would not work with it, providing the quantity
was scaled to the size of the grill and intense heat was not required. The
BTU range is 2600-4900, fairly low IMO. The exterior dimensions are 18"
wide x 14" deep. Obviously the grilling surface is somewhat smaller.

My Weber charcoal grill recommends cooking with the lid on and that's
to ensure a hotter temperature and quicker cooking time.
I would suggest, as others here have, to just use any favorite grilled
recipe and just keep an eye on what you are cooking. Like Weber
grills, don't be jerking the lid off every 5 minutes to check on the
food, you'll just delay the food cooking as quickly as it should. I
wouldn't think your grill needs any special recipes or attention than
any other grill.
