Drying Royal Icing

This is probably better suited to the baking group, but since that's
dead...I have a decorating dilemma- a friend asked me to make a 60th b-
day cake, and wants it to look like a road with street signs. She
needs it by Thursday night. I'm using royal icing for the signs- we
called it "flow work" when I was in school. Basically outline whatever
shape in royal icing, and then filling it in ( after drying a bit)
with it watered down enough to flow evenly within the outline. Now
done, but wondering if I should put them in the oven on very very low?
I'm thinking that they may not dry in time...

I've used the hair dryer on air setting and a slow speed.

I sure wouldn't put a sugar base icing in an oven, no matter how low.
Heat melts sugar, it's air and/or refrigeration you want, not any
heat. Set the cake (or decorations) in a cool room over night or for
a day, if you;re not happy with the drying, place a mild fan to blow
across them.

I'm thinking the humidity we have here in the Pacific NW is going to
mess with the program. I have a drying and a proofing setting on my
oven, and I think the proofing one is set for 80 degrees...

Or just set it on top of your (cool) cooktop, with the exhaust fan running at
whatever speed you like.

I have a proofing function (100F) on my KitchenAid stove that is a gas top
and electric convection oven. It's not a feature that seems to be
advertised.
It also has a warming drawer with multiple settings a touch higher than the
proof, I use that for drying bread of crumbs. The lower settings will not
melt sugar, so should work to dry icing

I also think that a toaster oven with a "warm setting", which is usually at
200F should also be fine for drying icing
After all sugar melts somewhere above 250F

Jenn Air- no idea if they all have those features. I think this was a
discontinued model...

Thanks! I have a Kitchenaid cook top as of two years ago and like it.
My only issues are with the indoor bbq. It's a PITA to clean and
didn't come with a cover, so I put my griddle on top of the grill to
use as a landing pad. KA seems to be slowly breaking into the large
appliance business, so I'll be sure to look at that brand when my
current Jenn-Air double ovens (one has a convect setting) bite the
dust.

Interesting! I have Jenn Air double ovens, but no proof setting.

Mine has 2 ovens also- the top one is a basic 1 shelf that we use most
of the time. I love it- it heats up really quickly. The bottom one is
the one with all the bells & whistles- proof, dry, and convection.
I've used the drying and proofing settings only 1 time each, but was
happy with the results.

Wow. My top oven is the one that does the most (woohoo) - which
are... wait for it.... convect and self-clean. LOL! Thanks for the
FYI - sounds like yours is newer than mine.
