Our Easter "dinner"

  On the menu for tonight is baby clams in white wine sauce over thin
spaghetti . I'd have made this last night but I took about 30 stings
yesterday while working with my bees (queenless hives are really nasty)
and wasn't in the mood (or any condition) to cook . And my timer just
went off , it's time to eat !

Our Easter dinner was a rack of lamb that turned out beautifully, air
fryer roast potatoes, steamed beans and asparagus and a green salad
with blue cheese dressing. Dessert was pineapple upside down cake. It
was the first pineapple upside down cake I had had in years, and it was
even better than I had remembered.

Don’t they have really good suits for beekeepers? Have you made any mead
yet?

Oh yes lets celebrate easter where a magical fairy came to earth and
cured the sick and did other magic that would rival harry potter. That
led to the deaths of millions of humans through many wars, torture,
rape, and theft of trillions of dollars. So yeah lets all get together
and celebrate that.

We ended up with grilled chicken breast. The leftovers will be used
for lunches. I had mine on a salad with balsamic vinaigrette. ISTR
he had his in sandwich form.

  Yes they do , and no I don't have one . My inexpensive bee suit is
not the problem , all those stings were on my hands - mostly on the
right . The problem is that they get frenzied and all attack at once .
The pheromone they leave at the sting site attracts other bees to sting
in the same place ... and it all happens so fast you can' get away quick
enough . This hive was "hot" last fall , as most big hives are . I was
hoping that having split it several weeks ago would help , but I think I
screwed up and managed to leave them queenless - and that makes the
colony very defensive . I'll be going back into that hive in a week or
so to look for signs of a queen , if I don't see signs I'll give them a
frame of brood from another hive with some eggs and less than 3 day old
larvae so they can make a queen . I'll be wearing gloves this time -
thick welding gloves that they can't penetrate with their stingers .

  No , getting stung is a part of the hobby . I usually don't get stung
. This hive probably hasn't got a queen - my fault because I screwed up
when I split it several weeks ago . I'll rectify that in a few days .

  My first choice for Saturday dinner was shrimp Lo Mein , then
downgraded to the baby clam dish , then to something I could just
nuke/air fry . We had the Lo Mein tonight , but beef instead of shrimp .
It was pretty good , but I think I can do better - I don't have any dark
soy sauce , I understand that it will add a whole new dimension to the
flavor profile .

When I make that, I use can of crushed pineapple.
Nicer than using the rings.
That cake also works well with sliced apples.

I tried it once with sour cherries. It had looked like a good idea, but
I was not happy with the results. That was especially disappointing
because I love sour cherries.

I use the pineapple rings surrounded by crushed, then dark brown sugar
and drizzle with dark rum and with Coco Lopez coconut cream. The
cherries really aren't necessary but I'll use them if I happen to have
some... sometimes I'll use green marachinos, for a virgin pineapple
upside down cake.
First thing I line the pan with waxed paper, then arrange the topping,
then add the cake batter. After it's baked and cooled some flip the
cake out on to a serving platter, better if the serving plater is
placed over the cake and then turn it all over so the cake drops out
onto the serving platter, peel off the waxed paper and dig in!

Do the green cherries taste the same as the red ones?? Just different
food coloring to produce the green color?
