Space is cool, interstellar space, but when it comes to bacon, the pork is where it's at. My local shop sells a wonderful thick cut bacon, nicely streaked for $5CDN lb. One slice per day along with my regular healthy breaky(avocado, steel cut oats, buttered whole grain toast) is what I plan on. Bacon gives strength and health and vigor in modest portions.
The same shop sells prime grade strip loin for $30lb. Ouch.

this is the best kind of bacon, home made pork belly bacon. photo is
from february 2020. i had bought 2 pork bellies then at approx $2.50 lb.
each belly weighs about 11 lbs. i'm going to be making more in a month
or two, i'm curious how much the price has gone up. i'll do the same,
one belly will be used to make bacon, the other used to make pancetta,
both using low sodium recipes.
