this is the best kind of bacon, home made pork belly bacon. photo is
from february 2020. i had bought 2 pork bellies then at approx $2.50 lb.
each belly weighs about 11 lbs. i'm going to be making more in a month
or two, i'm curious how much the price has gone up. i'll do the same,
one belly will be used to make bacon, the other used to make pancetta,
both using low sodium recipes.
