  And the one I put on the smoker a little while ago is a 9 pounder .
Tuned it up with a nice thick coat of SnagRub and let it rest a few
minutes before I put it out on the smoker . I'm running right now at
200° F , which I'll hold until tomorrow afternoon when I'll drop it to
about 185° for the last few hours . I started a little differently this
time , I usually get the smoker going and put the meat on right away .
Tonight I let it get going quite well then throttled it back . I found
it a lot easier to get the temp regulated doing it this way .

I do. If I don't eat a dead animal daily I turn into blubbering idiot like

  Really ? Nope , no flags . For your mental image picture a medium
height fairly slender guy with a full beard (mostly gray now) , not much
hair , and glasses . I look natural with a tool of almost any kind in my
hands .

Even though I am 100% vegan I actually love shooting the animal,
chopping it up into the parts I want to eat, making sure I waste
plenty to piss off the tree huggers. Then I freeze what I dont eat and
burn the rest because I am not going to eat it anyway, put some out
for the dog that I dont have then later pick it back up cause I
realize I dont have a dog. Throw some in the yard so the wild animals
will come eat it and shit in my yard to promote fertilization of the
grass that I never cut because my yard all dirt and rocks because I
live on the side of a cliff.

That is all I have to say about that!

I've said it before and I'll say it again: Moron! Pork butts
typically get cooked to 205F on the smoker. You can get it pullabke
by cooking it lower and slower, but at a great loss of time and
moisture. It doesn't absorb any smoke after 149F. there is
absolutely ZERO ADVANTAGE to drawing out this process like you do.

Yesterday I did the big half of brisket (8lbs), a full slab of
spares (4.75lbs), a 3-pound pichana, a few pork country ribs, and a
ring of sausage all in 12 hours. Without the brisket I could have
been done in under 5.

Wow not even a giggle.... I laughed when I reread it. I thought it was
pretty damn funny. I live in the middle of a city, where I live is
evern called mid city. I dont own any weapons to kill the animals that
they dont even have that can be eaten because I am in the middle of
the city.

Back in the mid 80s I went to North Carolina to spend a couple of days
with a new salesman. At lunch he suggested we get barbecue. It was
pulled pork with cider vinegar sauce. I have never heard of it but was
hooked. My quest was to find out more about it and how to duplicate it.
Took a few tries to get it the way I wanted.

I made some a couple of weeks ago. Shared it with some folks that
never had it and they enjoyed it. We prefer the eastern NC style.

For mother's day I told my wife she could have whatever she wanted.
Brisket it is. Goes on the grill Saturday night.

You are observant. I think I only posted once about that, and we were
still looking at the time.

Yes, we found a great house, very cheap, 4 hours north. We bought it
"as is" thus getting a huge discount. It needed work because of damage
mostly, but was a very sound house structurally, plumbing and wiring
were faultless. 4 x 2, double brick and tile. We moved about 2 months
ago and have been busy renovating. We love it here, 2 streets from the
beach.

I still read, don't post much.

bought a BBQ last year and is learning how to use it:)

For mother's day I told my wife she could have whatever she wanted.
Brisket it is. Goes on the grill Saturday night.

  The key is the dry rub . It has brown sugar in it , forms a glaze
over the roast in the first hours of cooking . That's how it stays moist
thru the extended smoking time .

Geraldton, IIRC.
I was in WA earlier this year. A few days in Perth, including Australia
Day, visiting old haunts from when I lived there in the early 70s. Then
10 days in Dunsborough before taking the Indian-Pacific to Sydney. 43C
in the Swan Valley one day. Nice, as it was below -30C at home!

Here's the recipe :

   SnagRub
5 parts onion powder
2 parts garlic powder
1 part paprika
2 parts salt
4 parts chili powder
6 parts brown sugar
 Mix well making sure the brown sugar is completely incorporated .

  I pack it on the roast liberally , as much as will stick . It's also
good on grilled chicken and pork - but don't use as liberally as on
butts or shoulders .

I do, covered of course, then on the 'cool' side of the Weber for about 2
hours with wood chips. I let them smoke for as long as I see smoke coming
out of the barely opened vents in the top. Bottom vents are also barely
open then into a tightly covered roasting pan into a 300° oven for about
3 hours.

Yummmmmmm-yummmmmmm.

I never tried brown sugar on butts. I'll give it a try nest time. I do
use it on briskets though. I'll be doing one starting Saturday night.

My brisket rub is simple. Salt, lots of pepper, garlic powder, onion
powder, brown sugar. It works. I've seen people with complex recipes
with 20 ingredients, but most are just lost and wasted.

I rub it a couple of hours ahead and let it sit out at room temperature
before going on the grill at 250 degrees.

That's my favorite too. First time I ever had ANY bbq sandwich
was the winter of 72-73. I used to travel from the WashDC area to
VaBeach every few weeks (to see girlfriend). Late one night I
saw a very small bbq stand (somewhere between Richmond and
Williamsburg), and I stopped in as I was hungry. It was called
Pierce's BBQ. Just a very small place, no seating and a gravel
parking lot. Old man and old wife ran the place and served me.

I ordered 2 bbq sandwiches. They asked me if I wanted cole slaw
on it. I didn't know so I said, "Sure, what ever you recommend."
Well that did it.

I didn't stay there to eat 2 sandwiches, I just got back on the
road to eat while driving. Still about an hour or more to the
beach. By time I got near the beach, I was actually tempted to
turn around and go back for more. Best thing I had ever eaten.

Anyway, from then on, I always stopped there and bought at least
6 of those boys.

Pierce's BBQ went on to become VERY famous locally for the best
bbq. They opened many more stores in southeastern va.

Good eats, for sure.

Yes, Geraldton.

We are in the last month of Autumn and the daytime temps are still in
the high twenties, just georgeous. Fabulous gardening weather.
