Rice-a-roni and artichoke salad

Hi,

Does anyone have the recipe for a salad that used Rice-a-roni, artichoke
hearts, almond slivers, and some sort of a dressing. It was popular
during the early 1980's, but I can't locate a recipe anywhere.

I remember that, too...it was good. I remember it had raisins, cucumbers
and tomatoes, too. I think the dressing was a plain yogurt, mayo, curry
combo. I'm looking forward to this recipe, too, if anyone has it.

This may be it. I've not tried it.

Rice-A-Roni Salad

2 pkg. almond or chicken rice-a-roni
1 small green pepper
3 stalks celery
2 bunches green onions
1 can waterchestnuts
1 can black olives
1 jar or can artichoke hearts
1/2 cup mayonnaise
1 Tbsp. sugar
salt & pepper

Cook rice-a-roni according to package directions and cool. Drain juice
from artichokes. Add the vegetables to the rice-a-roni. Mix well. Add
1/2 cup mayonnaise, 1 Tbsp. sugar, salt and pepper to taste.

That's pretty much the recipe I remember, too, though my recipe included
curry powder and didn't have water chestnuts, celery, or sugar, I think..
It was okay once or twice but nothing anyone here raved about.

Here you are Jesse.

Artichoke Rice Salad

1 package Chicken Rice-A-Roni
2 green onions, thinly sliced
˝ green pepper, chopped
8 pimento stuffed green olives, sliced
2 6oz jars marinated artichoke hearts
ź tsp. Curry powder
1/3 c mayonnaise of salad dressing

Cook rice as directed only omit browning. Add onion, pepper, olives,
drained artichoke hearts (save marinade). Combine mayonnaise, curry powder
and add marinade until a nice consistency is reached (this is the dressing).

Add dressing to the other ingredients, stir, and refrigerate for a couple of
hours or so.
