I've been out shoveling rabbit poo ... 2 loads in my yard trailer to
add to the garden and flower beds ! My neighbor's rabbits produce more
fertilizer than he can use so ...
OK , here's the latest - and I think best - version of my sauce for
pizza and calzones .
3 pints diced tomatoes
(I use 1 qt of our home canned plus about 5 frozen Roma tomatoes)
1 6 oz can of tomato paste
4-6 cloves fresh garlic - smashed then chopped fine for maximum flavor
1/2 medium onion , fine chop
2 tbsp oregano
1 tbsp basil
1 tbsp italian seasoning
1 1/2 tsp salt
1 medium Serrano pepper (or 1 small cayenne) seeds removed
2 medium bay leaves
2 tbsp dried parsley
1 tsp chili powder
1 tbsp brown sugar
4 tbsp red wine
dash thyme
1 tsp dried celery flakes
Sautee the onions and garlic in a little olive oil (not listed) until
just translucent . Put all ingredients in an appropriate size sauce pan
and bring to a boil . Reduce heat to a very low simmer , simmer for 2-4
hours . You'll know when it's "right" . Feel free to jigger the spice
balance to your taste , some like a more pronounced basil flavor , some
lean towards more oregano . The current version has a very balanced
flavor profile , you get hints and nuances of many of the seasonings .
