Bought some alligator meat

Very first "Cajun" festival I went to, in SFBA, was the "New Orleans
By the Bay" at Shoreline Ampitheater(?). Had some "alligator
etouffee" by Paul Prudhomme. It was great! (bought his first book
-signed! )

Bought some frozen "alligator" meat, yesterday. fer $11.95usd per lb.
Only problem is, any kind of etouffee is served over rice. Anyone
here have a recipe?(preferrably from Paul's first book) ;)

No don't use shrimp. Shrimp etouffee is not really a louisiana dish.
Try Crayfish etouffee or crawfish etouffee. Crawfish etouffee is one
of the best tasting dishes out of any food I have ever eaten (if made
properly) and there is pretty much a monolog on that dish in
louisiana.

No I don't. Gave it to my local library when I moved. Plus, it did
not have K-Paul's version of "alligator etouffee"! Duh!!

Tried it today. Came out OK.

The alligator was mostly 'meaty', unlike the 'super fatty' alligator I
saw when I applied for a job at a Cajun festival vendor, (yrs ago)
who was less than honest.

Couple/three more days of this rice and I'll make some pork fried
rice. (One of the few rice dishes I actually enjoy ;)
