Chicken "Tenders" (baked)

I thawed two boneless skinless chicken breasts which I cut into wide
strips (lengthwise). I've got them marinating in an oil & vinegar based
"salad" dressing. I'll be dredging them in seasoned breadcrumbs and
baking them on a oiled, foil-covered metal baking sheet. (The foil is
for easy cleanup.) They'll be baked in a hot oven (about 425F). I
haven't thought past that to a vegetable side yet.

Next time, great idea! I need to put winter squash on my list. It's
starting to get warm here (windows are open) but hard-shelled squash are
still abundant in the stores. I love baked acorn squash. Buttercup is
very similar.

It is far from my favourite, but there is a restaurant in town that
makes really good cole slaw. It is the only place where I eat it all
rather than just having a taste.

I've been experimenting recently. The 'purists' don't like it when I use
that term to describe the latest stable branches in my testing tree.

Let's just say raw brassica leaf & umbellifer root based salad with a
sweet + acid + mayonnaise/oil based dressing.

If you want, I can detail two ingredient vectors (veggie & dressing).

Because of course you have to do it the normal way.
You're a real *color inside the lines* kind of guy. Hey,
that's what I'd want in a house painter, a technician,
rather than an artist. This is the same mindset as
reading other books and writing like others write.

I always brush French bread with egg white to make
it crusty if it didn't start out that way, and I don't use
shitty hoagie rolls just because other people do. I
don't slop jarred beatoff (mayo) on them either. I
didn't even use onions, but only peppers, so I guess
it wasn't a "Philly" cheese steak.

A lot of slobs use Cheez Whiz. I used cheddar,
which is not normal.

I'm lazy (and still working, lol), so I usually get the mix. I'll usually have a head of red
cabbage on hand, though, it's one of my fave vegetable thangs... also shredded carrots.

Besides regular bagged coleslaw mix, there's broccoli mixes, and now various chopped
salad mixes, e.g. "Asian", etc., fun to mix them up...

This week I made an "Asian" style slaw, with a dressing of lime juice, soy, ginger, garlic,
sesame oil, red pepper flakes etc... garnish with peanuts or cashews...

Last week I made a creamy slaw...

Next week, prolly a vinegar - and - oil slaw...

"SLAW - count me a FAN...!!!"

I've been experimenting. Usually I shred a bunch of the veg mix with a
bit of lemon / lime juice to prevent darkening, but I mix it with the
dressing one serving at a time.

Otherwise, a lot of dressings tend to 'seep' liquid.

I use a food blender just a few seconds at a time until I get the size I
want. Don't try to shed leaves & root at the same time, i.e. carrots &
cabbage in the blender. They have differing densities & hardness thus
will yield an inconsistent consistency.

Brassica: (Rred / green / Savoy cabbage, bok choi, nappa.) I have not yet
tried kale, mustard greens, or brussels sprouts.

Apiaceae / Umbelliferae: carrot, parsnip, celery root. I suppose kohlrabi
or rutabaga would work here as well.


The sauce is too contentious to get into seriously. Don't forget the
lemon / lime that has already been added. Add a bit more acid, perhaps
malt or wine vinegar and a bit of something sweet, either honey, maple or
agave syrup, cane / date molasses, or HFCS. Sheldon says marmalade can be
added to anything. If you are working from the centre of a caggabe head,
it has more sugar to start with.

Then if you want creamy, add some yogourt or sour creme or cottage
cheese. Some will add mayo, or perhaps vegetable oil.

Don't add too much of anything; all need to be balanced.

I don't buy cabbage, it's very easy to grow. Those cabbages at the
markets were all harvested two weeks ago, not worth eating, not even
good for kraut. There's a huge difference in the flavor of fresh
picked and weeks old.

I've heard. They even talk about adding various berries, grated carrots. etc.. Forever forget about "normal" salad mixes.

I wouldn't brush the the already baked bread with egg whites, either.

As for my chicken tenders, it was two *whole* boneless skinless chicken
breasts, not two puny chicken breast halves. I made 11 nice meaty,
tasty, crispy chicken tenders. It would likely have been enough to feed
both him and his wife. This "crone" got leftovers to take for lunch. :)

Bagged mixes have always wigged me out. I've heard about recalls on
some of them. Easier, I'm sure, but I just stick to a head of lettuce,
cabbage, etc. I usually have carrots in the fridge, etc.

Here is some food for thought. When you buy a bag of mixed salad greens
they come in a bag that has a lot of information about the source of the
contents and they can be traced back to a single plant and order a
recall. When people buy a head of lettuce or a bunch of bulk spinach
the information is harder to track. IMO the hazards of bagged greens
are a matter if traceability.

Yes indeed. The key is being comfortable with and liking yourself. I
have known many women who were all about having a husband. They
wouldn't know what to do if the guy suddenly kicked off. (Probably try
to line up another one, I suppose.) They weren't necessarily happy, but
hey, they had a man! I'm very grateful I know how to handle my own
finances and don't have to rely on someone else to arrange (or pay for)
very simple things such as household repairs, etc.

Good for you Ed! I always felt I wouldn't have the same luck twice
(as in great marriage) and although I will go out with some, at no
time do we even consider a consistent arrangement.

Aside from anything else, a friend (some called her a Casserole Lady)
who did remarry because she felt it seemed better than being single,
found after two years she was a nurse, he had a stroke. I was younger
when I looked after David and would not want to try and do the same
again.

I can understand that. My wife had BFF who was very happily married to a
really nice guy. She dropped dead at the age of 53. He was heart broken.
A few years later he found a really nice (divorced) woman and they
married. He had two daughters and she had three daughters, and everyone
seemed to get along great. They were only married for about two years
and things fell apart. She said she just didn't love him and, upon self
examination, he realized he didn't really love her. They had an amicable
divorce and he is very happy living on his own.

I used to grocery shop several times a week and often just for that day.
(Hmmm...what do I feel like eating today?)
By time I hear about a recall, I've probably already eaten the darn stuff.
