My SIL made a chess pie. I've seen them mentioned here more than a time
or two. Here is a picture of hers.

Since she in now "Ensconced In Wisconsin" which would be a great title
for a polka tune, I still haven't tasted one.
My googling points toward a pecan pie without the pecans. I'm sure
there's more to it.
I suppose I could make one...

Why bother. Just get a 5 lb bag of sugar, and eat it with a
large spoon. It will taste exactly the same.

No pans or dishes to wash. Your gut full of sugar, same as
doing all that work. Think Officer!

Boys, a chess pie is sooooooo simple to make, you really can't mess them
up unless you let it burn in the oven. If you're really adventurous you can
make your own crust or you can use a storebought one. I always opt for
a deep-dish ready-made pie crust.

Just as I was getting ready to 'post message' I stand corrected. Yes, you
can mess them up. My niece does when she makes her. I believe she uses
too much sugar and it does not get a chance to dissolve once the pie is
in the oven.

I know it's more complicated than to duplicate the recipe on a Karo
bottle for pecan pie with more filling and no nuts. It has to be.
That brown, sandy surface has me puzzled (without googling). ;)

That brown, sandy surface is the top of the pie that has browned and formed
a light crust with a nice silky/creamy interior.
