Chicken stock tastes pretty good

I got some chicken legs for $1.29 lb. So I made chicken stock. Just chicken legs, no veggies. It tastes pretty good. I'm making a soup today, chicken stock, inside round slices of beef, green peppers, onions, ginger, garlic and mushrooms.

Chicken stock sounds okay but I'd nix the beef... beef with chicken
stock is a definite TIAD... use the meat from the chicken legs
instead. For substance add some diced potatoes or better, some egg
noodles... cook the noodles seperately or they'll suck up much of your
stock. Could use diced carrot and celery too, and some curly leaf
parsley and dillweed.
Consider the beef round for a beef barley 'shroom soup...start by
dicing and browning the beef.

Don't agree. I think beef simmered in a good chick stock is OK. I don't make beef stock. The bones are too expensive.
I don't use the chicken from the meat used for stock. I simmer 6 hours or so in order to get max flavor, the meat would be mushy. Egg noodles = OK. I'd not mind using chick necks and backs, but I can't find them. I can get turkey necks, but they are also too expensive.

It is not stock if it is made with meat - it is broth.

De-bone the chicken and make stock. Then poach the meat in the stock so
it is cooked but not destroyed. Remove the chicken, pull it apart, and
use it in the soup.
