As long as I haven't opened the package, how long do dry mung beans last on the shelf and still be good for sprouting?

I have a couple bags of "dragonfly" brand and thought I'd "try again" at sprouting -- if I remember, it's a more tedious process than you think.

Are you saying you have mung beans? They'll keep practically forever.
BTW: cook up the beans with a ham hock and you've got dinner. They're
a short cook. Slightly longer than lentils, not nearly as long as
most beans.

Don't care for lentils too much -- do they taste like that?

I'm not very good at telling people what things taste like. Think:
bean... or maybe it tastes like chicken.
