Went to a local chain (GIANT) on the way home and picked up a pair of
lamb shanks. They came shrinkwrapped, just like a turkey.
Opened them up and the stench was overwhelming;
Right back to the store and without question my money was refunded.
Went back to the butcher and asked him about it. Yes, says he; other
customers have complained also; you have to let them air for about
:10 minutes.

I have had that experience with meat, particularly
pork, sold in cryovac packaging. I rinse the meat
and pat dry. The smell goes away in a few minutes.

There are occasional threads on thie subject in
this group.

I suspect it has something to do with the wrapping, but I'm not willing to take any
chances, and besides that, once I smell something that awful, there's no way I want
to eat the source!

In my experience, any meat that's in a "cryovac" bag can smell funky
when the bag is first opened. As the butcher said, the funkiness should
lessen significantly once the meat has been exposed to air for a while.
If it doesn't, then you may have a reason to return the meat. But to my
nose, the first-opened funky smell is quite different from a spoiled-
meat odor. Having said all that, I have noticed that cryovac-packed
lamb from Australia has a much stronger first-opened smell than either
domestic (U.S.) lamb or New Zealand lamb, and that most of the cryovac
lamb from anywhere is more pungent than cryovac beef or pork.

I dunno. Did you try rinsing them? I always expect an off odor until
I've rinsed off meat.

"off" odor is one thing - this was vile, like a backed up septic

Most cryovac will have an order of some sort. Australian/New Zealand lamb is slaughtered, packed, and shipped by boat....from Australia/New Zealand. It isn't frozen. Order will build up. It is more gamey than American lamb too. There isn't anything wrong with it. Most meat is the most flavorfull before it rots. Why does real dry aged beef taste so good after you scrape all the dead crust off and cook it?

Because as bacteriological begins the first thing bacteria do is break down the meat, but until enough do and exude enough exotoxins the meat is still safe to eat!

And since vultures tolerate exotoxins very well... ;-)

I have eaten rotting beef steaks a couple of times. I found them to be pretty tasty and quite memorable. Last night I had lamb chops baked in puff pastry which was then filled with a cream sauce. The pastry and sauce was great. The lamb was not bad. It was the first time I've ordered lamb in a restaurant.

Something in the taste changed. Same with pork. Some pork has a horrible

Some pork does taste funky - that's for sure! The place we ate does have some pretty cool looking food. The restaurant is fairly unpretentious, though.

The last time I ate lamb was 35+ years ago. I can't say the meat was spoiled
but I believe the animal was improperly butchered giving it a MOST REVOLTING
taste.

This was served at work and there was a line of diners bringing their plates
back to the cash register for a refund. The pans of lamb stew were quickly
withdraw from the serving lines and never served again.

Chicken seems to be the "it" meat these days. I went to a dinner with my daughter on Friday and she passed on the rib roast i.e., the King of Roasts. She opted for the chicken and fish instead. Perhaps the King is dead.
