Flour tortillas

I stopped keeping them around, as they were almost always made with low
fiber white flour.

Found a "low carb, low fat" brand and tried it, and was pleasantly
surprised. They were very tender, very moist and fresh. 81 calories, 11
carbs, 5 grams protein, 2 grams fat, 6 grams fiber. NO cholesterol, no
transfats. That's a huge nutritional improvement over regular flour
tortillas. The first ingredient is water, the second whole wheat. They also
contain oat and soy fiber and lecithin. There are several brands, the only
one I tried was from "Ole Mexican Foods," called "La Banderita." They are a
little more expensive than regular because you get 8 instead of 10
tortillas. But at $2, still a deal.

My husband likes burritos and soft tacos filled with different things. I
like to make leftover beef and pork in to "taco meat," and yesterday I had
scrambled eggs with salsa and melted cheddar in a tortilla, it was
wonderful.

In WA you can get Surita brand. They make whole wheat and they have no
trans-fats. Not sure if they are available elsewhere.

Mission brand seems to be the most available. I've tried both their
white and whole wheat "Carb Balance" varieties and they are palatable.
Not as good as the local tortillarias make, but definitely healthier.

Mission and a couple others are making various alleged low carb high fiber
flour tortillas. But the Missions cost almost five bucks a package for small
taco size tortillas, and others, which use more corn and whole grain, cost
almost as much. Then there are low carb corn version, which is less
expensive but is low carb mainly because it's paper thin. Anyway I ain't
paying five bucks for a bag of little flour tortillas.

The Mission low-carb whole wheat small tortillas are under $3 here.
Maybe you can contact the company and get them shipped directly. They
freeze well.

They are a net of 5g of carbs per tortilla and are used here about once
a month for tacos or enchiladas. If you like hard shell tacos, hang
them over two bars of the oven rack and heat them until crisp.

Same here, but I don't really like whole wheat tortillas. I guess I left
them out of the commentary. The white flour tortillas are the ones that are
stupidly priced. You will pay a price penalty for buying anything that might
be healthier than the status quo.

One thing I wonder about is how cooking affects these fiber-added
carb-subtracted foods. With pastas like Dreamfields, if you cook it too
much, it loses it's alleged low-carb properties. Some people still report
blood sugar spikes.

There is a blended low carb tortilla, which seems to have both corn and
whole grain flour, and is pressed very thin. Mi Mama brand IIRC. Sells for
between 3 and 4 bucks, again for small tortillas.

I don't have any issue with frying tortillas as I'm not low-fatting and
don't need to. But the oven rack trick could come in handy.

I need to look for those. So far, they haven't caught my eye - not
saying they aren't there, just that I haven't noticed them yet.
Googling, I see there are also low carb tortilla chips. Must look for
those too and see how they taste.

The Mission tortillas do not have inulin like Dreamfields. I can eat
the Mission tortillas. I get terrible gas pains fro Dreamfields from the
inulin.

Yes, it's a prebiotic that is notorious for producing gas.

Thanks for the offer Janet! We do have Mission brand tortillas up
here, so with any luck - it's just a matter of locating or requesting
the low-carb version. :)

I took the visiting step-daughter to the food co-op the other day. She
was in pig heaven with all the different tortillas. I had no idea
that tortillas could be made out of all that strange c**p. They
certainly didn't look appetizing. But then, most of the stuff she
brought into the house didn't look, taste or smell good, but surely
was expensive.
