Price of corned beef and/or brisket

Took mom to Wallyworld yesterday. I was hoping to score a good deal on
corned beef, it being so close to St Patrick's Day, but was shocked into
disbelief when I saw the prices: $3.48lb for corned beef and $3.86lb for
"boneless" brisket! Well, screw that. I've never paid more than $2lb
during St Pat's corned beef sale days. And what the Hell is "boneless"
brisket? I've yet to see a bone-in brisket. What's with these insane meat
prices? Gas is at the lowest in 4 yrs.

What kinda uncooked corned beef prices prices are you folks seeing?

Vons/Albertsons both came out this week with $0.99/lb point cut, loss
leader I guess, $2.50/lb for flat cut.

Currently Safeway has corned beef for $1.79/lb.

Raleys, has it for $2.47/lb, or you can step up to round for $3.47/lb.
They also have Black Angus and it's $3.77 and $3.97 for round.

I happen to like Angus, so that price is okay with me. Whether I do a
corned beef this year remains to be seen. I think we have a brisket or
two in the freezer still.

I haven't seen anything under $3/lb for quite a while. A couple years
agot he local Randall's (Safeway) had it for about $2/lb on sale St. Pats
day week. And the stuff lasts so long that it doesn't even go on sale
after St Pat's day when they're overstocked.

If you start corning a flat of regular brisket tonight, it'll be ready by
St Pats day.

What's the difference if WalMart does it at the store or I brine it at
home? Brining pork and poultry is ALWAYS done in my kitchen.

This is my favorite brine mix!!

Mark Peel's Brine

marinade

2/3 cup salt
1/2 cup sugar
1/2 cup black pepper, cracked
1 pinch thyme, dried
13 cloves
13 allspice, cracked
3 bay leaves
13 juniper berries, crushed
1 water

Combine salt, sugar, pepper, thyme, cloves allspice, bay leaves and
juniper berries in saucepan. Add 1 quart water and bring to boil.
Simmer 5 minutes, then add 1 gallon cold water. Chill thoroughly
before using brine.

Makes about 1 1/4 gallon brine.... enough for a 12 to 14 pound
turkey.

The spicing is very faint, mostly you taste the salt and a bit of the
sugar. It's a bit like a very elegant version of commercial smoked
turkey, only without the smoke. A couple of dashes of liquid smoke
might
be nice also. Peel also used this recipe for roast pork and smoked.

For a pork loin, cut all the amounts by half. for fish or chops, cut
them
to 1/4.

Yield: 1 servings

Here in the boondocks of WA it is on sale for $1.99. Just cooked some
and is great! 2 1/2 hrs simmering then potatoes, carrots & cabbage in
the cooking water with a bit of lemon juice to keep the cabbage green.

I paid $1.49/lb for the house brand point cut at Safeway in Hawaii. I
got 2 pieces but one of them is a big ugly piece that's mostly fat.
Uggggh, that's what I get for carelessly grabbing a hunk of meat and
dumping it into the shopping cart! I'm boiling both of them but that
piece deserves special treatment. Hopefully, boiling and roasting and a
whole lot of barbecue sauce will help disguise it's shortcomings. I'm
not expecting much though.

Prices are what YOUR market will bear. I know that New York City
will have higher prices than Jackson MS....but that won't compel me to
move.

Comparing prices between cities doesn't make a whole lot of sense. If
your city is 10 cents more than I pay...what am I suppose to
do...gloat?

I don't buy corned beef, but I've been seeing brisket ostensibly "$2/lb off"
for $3.99/lb. I normally don't pay more than about $3.49/lb for brisket at
the most, and I don't think I've EVER seen it priced at $5.99/lb, which they
imply is the "normal" price.

Well then, why don't you give your preferred brine mix to Walmart so they
can use your brine before they sell it back to you?

You can't brine pre-brined meat. At least not effectively.

I went to Vons today to buy the corned beef pont at $.99. The butcher
said they sold out the first day the ad appeared and when they ordered
more it was recalled. He didn't know why it was recalled. I paid
$2.69 per pound with the Vons Card for the brisket. Without the card
it was $3.69.

Because they don't brine it they add a preservative and water in order
to sell you the water for the price of the meat. And the preservative
allows it to sit on the shelf for a really long time.

Exactly. First of all, I like to prepare my own food if I'm buying
a piece of meat. If I wanted prepared food, I'd go to the
freezer section or the prepared food section. If I buy a steak,
that's what I expect, just a steak. Second, I don't appreciate
them adding 20% of water by weight so I can pay $5 a pound
for it.

Bad enough they do that to pork, it would really annoy me if I
found them doing that to beef. People shopping at WalMart
don't seem to know what they're buying. Why would I shop
at a sneaky store like that if I have a choice.

I bought two "Buckley Farms" approximate 4 lb. flat cuts at Raley's
today (3/14) for $1.99 per pound. Both are freeze or use by May 18th.

Right, it'll go on sale next week, in the NYC area the fixings for St.
Paddy's day will be slashed at least by half, they'll price corned
beef for St. Paddy's day like they do turkey for Thanksgiving...
usually when you spend a certain amount they toss in cabbage and
potatoes for free. Neighborhood gin mills will serve free dinners to
patrons with green beer... even the bagel bakers do green bagels,
green cream cheese too. The liquor stores will have their best week
of the year. Dunkin' Donuts will have lots of green donuts, decorated
with holiday candy... kiss my Blarney Stone, Dwarflol:

It's $4.99 this week at my local Kroger. I don't expect to see it much
lower than that here in Ann Arbor, MI.

Freakin' ground chuck was $3.99 at my usual store, which is not a
national chain.

I picked up a corned beef (flat) at walmart last week @ $4.00 lb. Went
by this morning figuring the prices might have dropped. It was $4.50lb.
I bought one anyway.

And so it goes ...

Kroger in Blacksburg had flat cut at $4.49/lb. when I looked today. In my experience from past years it won't get any cheaper after 3/17 either. It's just never all that good a price around here.

Chicago for a little over $11.00 a pound and then pay 20 to 40 bucks

Cooked that $4.50lb flat a few days ago. Looked great so I took it to
our house for dinner. Thought it would last 3 or 4 days. We finished it
in two. Ate it with cabbage. Like two starving gluttons we ate it. When
we finished we sat hugging one another and wept for a while. God, I love
Corned Beef!**

Stopped at Walmart again this AM and prices were up to near 5 bucks. I
left with a scowl on my face. Went to a second store on my way to my
house ... same story.

This evening we didn't have anything in our house that seemed appealing
so I dropped over to our local Walmart Neighborhood Mkt. They had $4.50
flats and points at $3.50. I bought 3 points. Did I tell you I love
Corned Beef?

That makes the $6.50, not sale price, I paid for the nicely trimmed
flat cut (from the place in town that supplies restaurants) a relative
bargain/

How much did it weigh? Corned beef shrinks by at least half. Even
with the flats by the time you trim away the fat you only have about a
1/4 the original weight.

I wouldn't have bothered, I wouldn't want to cook corned beef again...
why didn't you buy a few the first time... I wouldn't cook less than
at least four, I begin early because it takes me a good part of a day
to cook corned beef... for someone who loves corned beef a flat isn't
much, two people shoulda finished it all in one sitting.
I use my 18 quart voluptuous PIAZZA stock pot to cook corned beef:

Not sure what happened, here. The closer --and usually cheaper--
Kroger mkt had pts at $3 lb, but the flats were $4.50 lb, while the
traditionally more expensive Safeway mkt had pts/flats fer $3/$3.50
lb, respectively. ????

I didn't argue. Jes bought a Safeway flat. ;)

$2.69 for point, $3.69 for flat here in the Intermountain West. More
at local Costco. Although you can buy a pre-roasted corned beef at
Costco for about $24.

The best price I could find was at Wally World $2.97 for points , they looked good so I got 3 . They were out of flats and this was the last case of points ...the next closest price was $4.99. The highest price was $5.39 at Save -A-Lot .

I don't know about ground chuck but I mentioned the price of cubed
steaks was $6.79/lb. It's not something I normally buy but after the
chicken friend (or country fried) steak thread when I saw them I just
had to check the price. Uh, no thanks.

Nope, the prices are not coming down. Still $4.99/lb at Publix and Food
Lion. Before the "sale" the price at Publix was $6.99/lb so I waited
until the $2 drop and bought two of them. I expect them to go back up
again right after 3/17/2015.

I love corned beef brisket. But I never see all these fantabulous
"deals" people talk about. Only once, last year, and I missed out on
that one. I also never see point cut around here.

That said, you paid handsomely for that corned beef flat. I can
buy nice flats of Boyle's for $4.99 at the grocer. I can buy
whole corned beef brisket for under $4 at RD.
