Overcooked broccoli? don't throw it out, here's a remedy.

This sounds horrendous till you think about it. I'm going to
overcook some broccoli on purpose.

That is an interesting idea. I remember having dinner at friends house
and being served broccoli tossed with olive oil, garlic and chopped
olives. It was delicious.

Just about anything with enough olive oil and garlic ceases to be
anything except "it" and olive oil + garlic!

I was sauteing some chopped onions/garlic in EVOO as the precursor for
something I was gonna cook and a housemate came in the kitchen and
asked what I was cooking cause "it smelled so good!" I told him,
"Well, just onion and garlic so far..."!

I like that site. Between yesterday and today, I've spent a lot of
time with Food 52 and saved several recipes from there.

I'm glad the article mentioned Nancy Silverton; that's where I learned about
long-cooked broccoli. Silverton makes an open-faced sandwich with
soft-scrambled eggs, long-cooked broccoli, and feta. It's a very good
recipe.

And I learned about long cooked broccoli from Marcella Hazan's books.
I think it is in either her 1st or 2nd book. This was way back when
her books first came out...

I think everyone knows about overcooked broccoli and tries to avoid
it. I've over cooked broccoli in that manner, but not on purpose, and
I'd rater not.

Looks good. Not exactly the same end result, but I purposely overcooked
broccoli last night along with a big sliced up carrot. Sauteed a medium
onion along with fresh thyme and 3 large garlic cloves in butter and
olive oil. Added flour and when it started to cook, I added 2 cups of
chicken broth, then 3/4 cup low fat milk/half and half combo to simmer,
then added back the broccoli and carrots. Simmered for a while longer,
then pureed with immersion blender to make a creamed broccoli soup, then
added cheddar and a couple of slices of swiss. Very tasty and easy on
my painful dental surgery.
