America's Test Kitchen recommends the OXO pizza wheel and I've got one
and I'm happy with it. It's the correct angle for the wrist and for
leverage.

Never had a good one. The best pizza cutter I had came from a dollar store.
Was a plastic thing that you rock back and forth. When it got decrepit, I
bought another one, vintage on Ebay. They are no longer being made.

Well, let's see if an old editor can make sense out of John's prose.

He's making centers, possibly raspberry flavored, possibly raspberry-caramel
flavored. He's poured the stuff out in a sheet to cool, and he needs to
cut it up so he can (I conjecture) coat it with something else (perhaps
chocolate). Once he's got this sticky stuff poured out into a fairly
thin sheet (maybe half an inch?), a pizza wheel is the best way to cut it.

Now there's a good idea. One of the best cooking tips I learned over the
last few years was to wipe some oil around a measuring cup before
measuring out molasses. Instead of leaving a thick and hard to clean
film of molasses in the cup there is never more than one small dot, and
that wipes out easily. It may not sound like a big deal, but I usually
find molasses very hard to clean out of measuring cups, and since I am
usually using it only in small amounts, like 1/4 cup, I worry that the
amount left behind will leave me short in the recipe.

Since the handle pivots on the wheel (or vice versa), how can the angle

I thought of that, but the handle does have a curve near the wheel. I
guess it has to do with the holding angle for leverage. Mine is
straight and works easy rnough.

Sounds like it's the center of some sort of candy.

Sticky things are often better cut with a rotary blade than with a knife.

It's a candy making technique I've grown very fond of using because I can relatively quickly control the temp! I line baking sheets with plastic wrap, taping it on at the edges making it a plastic wrap lined baking tray! Then I can make hot centers like a chocolate ganache for Chocolate Truffles, etc. So for the Raspberry Caramels I warmed 4.2lbs of Peter's Caramel in a big plastic bowl in the microwave then stirred in 40 drops of raspberry flavor and 10 or 15 of red food color then poured it into a plastic wrapped baking pan: "sheeted out Raspberry Caramel centers loaf" then put it in the freezer overnight!

And right now I am doing the same with my Egg Nog Truffles and I have two thick earthenware glazed dinner plates in the freezer to transport hunks of Egg Nog Truffle Ganache to the dipping table!

can do is make your own, any monkey can fabricate a pizza cutter.

Buy yourself a top of the line made in USA toolroom quality lathe and
milling machine and learn how to use them and you'll never need to

It looks EXACTLY like the Oxo Good Grips pizza wheel with the exception

Has nothing to do with greed. Has all to do with smart business
sense. Unskilled American workers want to be paid like they are
skilled., same as burger fippers want outrageous wages for a job that
shouldn't pay more than 50「/hr. Very soon robots will be doing fast
food. Yoose want top pay learn to build robots. A robot parts
assembly line worker is at best worth $15/hr. Won't be too very long
robots will be duplicating themselves, for free!

I'm normally doing that with bread. I use warm water and squirl the
smaller measure in that so it all comes out. Works for me.

Um, always buy TWO jars! DUH

I have a far better trick, no measuring cup to clean... a jar of
Grandma's molasses is 12 oz. Before even opening a new jar I mark off
the label at the half, quarter and eighth way points. I pour by
eyeball, and then when I let the jar sit a bit I can see what remains
and interpolate if I really need a drop more. I'm pretty much dead
on +/- a tsp.... and what does it matter if I'm a 1/4 ounce off either
way... it's cooking, not pharmacy. I do the same with most liquid
ingredients. More products should have their containers marked off,
not just sticks of butter. And it's very easy to measure out half a
can/bottle of an ingredient, pour until the level is at the top edge
and the bottom edge.... with a liquid simply make a mark at the liquid
level when standing upright, then pour till the liquid level is at the
mark and at the point where the bottm meets the side.... this is what
real cooks do when they need half a tin of an ingredient, especially
time saving with #10 cans. Bakers do likewise with ten pound bags of
flour when they only want five pounds, lay the bag on the bench and
whack at the half way point with the dough knife, flip up both halves
and there are two five pounders... any tiny bit falls out becomes
bench flour.

This has to be one of the saddest and most inexplicable local stories of
recent memory: Yoli and Michael Amr, founders of Gumbo’s, Yoli’s
Jambalaya and Mama Roux, are now dead in an apparent murder-suicide.

This is a profound shame, as in each of their incarnations, they had the
best Cajun food I ever tasted (and this is from someone who’s eaten at
K-Paul’s in New Orleans).

I have trouble believing it was money troubles, since Mama Roux was
always packed when we went there. Maybe there were health issues.

I’m at a loss. Sometimes people, even successful and apparently happy
people, do inexplicable things.

The cutting wheel spins to cut the pizza but it does not pivot nor does
the handle. You can, of course, turn the handle in another direction.
Maybe our ideas of 'pivot' are different.

What bakery uses 10# bags of flour? I worked in two different bakeries and I never saw a 10# bag of flour in either one. 100# bags yes, not 10# though!

if the cutting blade spins, you can hold the handle at any angle while
you are cutting.

True, but if the handle has a bend near the wheel you can make a cut
with your wrist in a better ergonomic position for leverage compared to
raising the angle. That said, the chances of having damage to your
muscles and tendons is pretty slim making four cuts in a pizza. Pretty
much an wheel will get the job done.
